2/3 cup short-grain brown rice
10 ounces spinach
1 cup canned black beans
drained and rinsed
4 garlic cloves, crushed
4 teaspoons tomato paste
4 teaspoons miso paste
salt & pepper
1. Place the brown rice in a saucepan with a generous 1 1/2 cups of boiling water and let this simmer for 35-40 minutes, until the rice is soft and the water has been absorbed.
2. Place the spinach in a frying pan with the beans, garlic, tomato paste, miso, a little olive oil, salt and pepper. Gently heat over medium for about 5 minutes or until the spinach has wilted.
3. Mash the avocado with a sprinkling of chili flakes.
4. Finally, place everything together in a shallow bowl.
